Crémant de Bourgogne

Our gently sparkling wine is a subtle blend of hand-harvested Chardonnay, Pinot Noir, Gamay and Aligoté grapes. The wine is rack aged for 12-18 months and then fermented in the bottle using the champagne method. Our crémant offers a fine mousse of bubbles on the tongue, it carries inviting floral aromas, and flavours of fresh peach, citrus and a hint of honey too.

Our story

Our story starts with a hazy early summers’ day. The backdrop is Puligny Montrachet, the commune responsible for producing some of the most prized white wines in all the world. With its gently sloping stoney terrior and row upon row of lush green vines, the air is still and the only sound is of chirping crickets and bees busy at their work.

We are three friends, wine lovers all, journeying in search of the fine wine that the Burgundy region is famed for. Our meandering path south through the province is punctuated by gentle conversation, laughter and long lunches. It is here that we discover for the first time...

Crémant.

Crémant is in effect champagne that isn’t from the champagne region. It seems that not content with crafting the world’s most prized cuvées by day, the wine makers of Burgundy blend Crémant as a past time, reserved for toasting at family celebrations with a few cases escaping to the choicest local restaurants.

It is here that we meet Aurélien, a 6th generation wine maker with a reputation for producing a quality of wines that have become the reference point for wine lovers and growers alike. Each autumn, Aurélien’s grapes are harvested exclusively by hand with only the richest and most complex first presses being retained. The resulting wine is aged in barrels on racks for between 12 and 18 months in his cellar, just the same way generations of his family have done for the past 124 years.

The result is Bõnnay, a fine sparkling Crémant de Bourgogne white wine that we present to you outside of France for the first time.

Our viticulture

Bõnnay’s destiny has been shaped by bold choices, starting with our wine grower’s decision to make the Chardonnay grape the signature of our wine. This has led to the pioneering intricate and floral style for which our Crémant is becoming widely recognised.

Our approach to viticulture is based on experience and observation, seeking to learn from our predecessors to understand the complexity of our limestone soils and the long-term impact of our cultivation practises. A combination of environmental research, embracing new technologies and preservation of the generations old artisan crafts that have underpinned the region’s activity for hundreds of years are all key to the subtle flavours and aroma that ends up in your bottle.

Wherever possible, we work by hand. Our vines are lovingly nurtured by a team of viticulturists who avoid using heavy machinery such as tractors to avoid ground compaction. Vine trimmings and grape skins are mulched and used as a natural compost to sustain future crops. Our grapes are harvested by hand, followed by gentle pressing in order to respect the fruit. The wine is then rack aged in our Burgundy cellar for 12-18 months to allow the aromas to intensify.

The resulting blend is a true labour of love. Elegant and refined, our cuvée Brut NV is a Crémant for all occasions. It is a blend of our four grape varieties: Chardonnay, Pinot Noir, Gamay and Aligoté which come from some of the best crus of the famed Côte d’Or region. The Chardonnay brings aromatic complexity, finesse, elegance and lightness. The Pinot Noir brings structure, body and power to the wine. The Gamay and Aligoté bring the fresh, round, acidic fruitiness.
